Cannoli Poundcake
Ingredients
- 1 cup granulated sugar
- Zest of 1 orange
- Zest of 1 lemon
- 1/2 cup olive oil
- 1 Tablespoon marsala wine, or 2 Tablespoons white wine (optional)
- 1 cup whole-milk ricotta cheese
- 2 large eggs
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 or 2 pinches allspice
- 1 1/2 cups all-purpose flour
- 1 cup mini-chocolate chips
- 1/2 cup pistachios, crushed
Directions
Heat the oven to 350° F. Butter a loaf pan.
Place the sugar, orange zest, and lemon zest in a large bowl, and stir until well combined. Whisk in the olive oil, wine, ricotta, and eggs. Whisk in the salt, cinnamon, and allspice. Gradually add in the flour and baking powder. Add the chocolate and pistachios, and stir until just combined.
Pour the batter into the prepared loaf pan and bake for 55-65 minutes.
